Reduce heat to low and heat the mixture for about 5 minutes.
Sprinkle shredded cheddar cheese down the center of each tortilla.
Divide the beef mixture among the tortillas, placing it over the cheese. Add mustard, ketchup (if desired), and tomato slices.
Roll up each tortilla burrito-style.
Grill the wraps, two at a time, on a preheated grill for 3 to 5 minutes until golden brown and marked.
