  • 2 -2 ½ pounds potatoes preferably Yukon gold potatoes or red potatoes
  • 1 teaspoon brown sugar
  • 1 ½ teaspoon Kosher salt
  • ½ cup scallions or green onion chopped
  • 1 cup Hellmann's Mayonnaise
  • freshly ground black pepper to taste
  • paprika optional garnish
  • 2 tablespoons vinegar white vinegar is used here but apple cider vinegar is fine to use

Instructions

  • Wash, peel, and cube the potatoes.
  • Boil potatoes in salted water until tender, then drain and cool.
  • Mix vinegar, brown sugar, and salt in a large bowl.
  • Whisk in Hellmann's Mayonnaise.
  • Add pepper, scallions, and cooled potatoes; mix well.
  • Chill in the refrigerator and sprinkle with paprika before serving.
