Hollandaise Sauce Recipe

  • 3 Egg yolks
  • 1 Tbsp water
  • 1 Tbsp lemon juice
  • 1/2 Cup unsalted butter melted
  • Pinch of cayenne pepper
  • Salt to taste

Instructions

  • In a heatproof bowl, whisk together egg yolks, water, and lemon juice.
  • Place the bowl over a saucepan of simmering water (double boiler method).
  • Whisk vigorously until the mixture thickens and doubles in volume.
  • Gradually add melted butter, whisking constantly until well combined and sauce thickens.
  • Season with cayenne pepper and salt to taste.
  • Remove from heat and serve immediately.

Notes

  1. Ensure the water in the double boiler isn't touching the bottom of the bowl to prevent overheating the eggs.
  2. Whisk continuously when adding melted butter to ensure a smooth sauce.
