Instructions
Heat olive oil in a large pot over medium heat until shimmering.
Add diced chicken to the pot and sauté until golden brown, about 5-7 minutes.
1 lb Chicken breast,
1 tbsp Olive oil
Pour in chicken broth and bring to a simmer.
4 cups Chicken broth
In a mixing bowl, combine almond flour, eggs, salt, and pepper to form a dough.
1 cup Almond flour,
2 large Eggs,
1/2 tsp Salt,
1/4 tsp Black pepper
Scoop small dumplings into the simmering broth using a spoon.
Cover and cook for an additional 10-15 minutes until dumplings are cooked through.
Ladle the dumplings and broth into bowls and serve warm.
Notes
Consider adding extra herbs for garnish or making a pesto to swirl on top.
