Ingredients

  • 1 lb Chicken breast diced into bite-sized pieces
  • 4 cups Chicken broth homemade or store-bought
  • 1 cup Almond flour for dumplings
  • 2 large Eggs beaten
  • 1 tbsp Olive oil for sautéing chicken
  • 1/2 tsp Salt to taste
  • 1/4 tsp Black pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat until shimmering.
  • Add diced chicken to the pot and sauté until golden brown, about 5-7 minutes.

  • Pour in chicken broth and bring to a simmer.

  • In a mixing bowl, combine almond flour, eggs, salt, and pepper to form a dough.
    1 cup Almond flour, 2 large Eggs, 1/2 tsp Salt, 1/4 tsp Black pepper
  • Scoop small dumplings into the simmering broth using a spoon.
  • Cover and cook for an additional 10-15 minutes until dumplings are cooked through.
  • Ladle the dumplings and broth into bowls and serve warm.

Notes

Consider adding extra herbs for garnish or making a pesto to swirl on top.
