  • 1 1/2 Cups graham cracker crumbs
  • 1/3 Cup Granulated sugar
  • 6 Tbsps Unsalted butter
  • 3 Large Egg yolks
  • 1 Can 14 ounces Sweetened condensed milk
  • 1/2 Cup Freshly squeezed key lime juice

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until well mixed.
  • Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  • Bake the crust for 10 minutes, then remove from the oven and let it cool slightly.
  • In another bowl, whisk together the egg yolks and condensed milk until smooth.
  • Gradually add the key lime juice, whisking until well combined.
  • Pour the filling into the cooled crust.
  • Bake for 15 minutes, or until the center is set but still slightly jiggly.
  • Let the pie cool completely at room temperature, then refrigerate for at least 2 hours before serving.

Notes

  1. For the best flavor, use freshly squeezed key lime juice instead of bottled juice.
  2. Be careful not to overbake the pie; it should still have a slight jiggle in the center when you remove it from the oven.
