Preheat your oven to 180C/350F and line a baking sheet with parchment paper.
In a bowl, mix flour, cornstarch, baking soda, baking powder, and salt.
In another bowl, whisk sweetener, applesauce, coconut oil, and vanilla extract.
Combine the wet and dry ingredients, stirring until just mixed.
Fold in the chocolate chips. Add a bit of liquid if the dough is too crumbly.
Shape the dough into 16 balls and place them on the lined baking sheet.
Bake for 10-12 minutes, until the edges are lightly golden.
Cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely.
