Line two cookie sheets with parchment paper or silicone baking mats. Set aside.
In a large bowl, whisk together flour, salt, baking soda, baking powder, and cinnamon. Set aside.
In a stand mixer, cream cold cubed butter and brown sugar on low, increasing to medium speed for 3-4 minutes.
Add egg yolk, maple syrup, and vanilla extract; mix until combined.
Gradually add dry ingredients on medium-low speed until just combined.
Scoop dough with a 2 Tbsp. cookie scoop, place on a plate or baking sheet, and chill for 30 minutes to 1 hour.
Mix granulated sugar and cinnamon in a small dish. Preheat oven to 350°F. Roll chilled dough balls in the cinnamon sugar and place on prepared baking sheets.
Bake for 10 minutes. Cool on the pan for 10 minutes, then transfer to a cooling rack. Drizzle with maple glaze and enjoy!
