Make or use store-bought vegan pie crusts. Chill dough balls in the fridge.
Cook peeled, sliced apples with lemon juice, sugar, flour, cinnamon, and vanilla until softened.
Set to 425°F (220°C).
Roll one crust to 12 inches and place in a 9-inch pie pan.
Add apple filling, dot with vegan butter, cover with the second crust, trim, seal, and vent.
Bake for 40 minutes until golden brown and bubbly. Use a pie shield if needed.
Let pie cool for 30 minutes
