Ingredients

  • 2 vegan pie crusts double recipe
  • 7-8 medium sized apples granny smith or honey crisp are best
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 2 tablespoons vegan butter
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • few tablespoons non-dairy milk for brushing pie crust + sprinkle of coarse sugar optional

Instructions

  • Make or use store-bought vegan pie crusts. Chill dough balls in the fridge.
  • Cook peeled, sliced apples with lemon juice, sugar, flour, cinnamon, and vanilla until softened.
  • Set to 425°F (220°C).
  • Roll one crust to 12 inches and place in a 9-inch pie pan.
  • Add apple filling, dot with vegan butter, cover with the second crust, trim, seal, and vent.
  • Bake for 40 minutes until golden brown and bubbly. Use a pie shield if needed.
  • Let pie cool for 30 minutes
