Ingredients

  • 8 ounces crushed pineapple
  • 1/2 cup butter
  • 1 cup brown sugar packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups confectioners sugar
  • 1/4 teaspoon teaspoon lemon zest

Instructions

  • Preheat oven to 325°F.
  • Drain pineapple, saving 3 tablespoons of juice for frosting.
  • Cream butter and brown sugar until fluffy, then beat in egg, pineapple, and vanilla.
  • In another bowl, mix flour, baking powder, baking soda, and salt.
  • Gradually add dry ingredients to creamed mixture.
  • Drop dough onto greased cookie sheet, bake for 17-20 minutes until golden, then cool and frost with pineapple-lemon mixture.
