  • Muddler
  • Strainer

Ingredients

  • 8 fresh strawberries hulled and halved, or 1/2 cup fresh grapefruit juice
  • 1/4 cup coconut milk
  • 1/4 cup white rum
  • 1/4 cup simple syrup adjust to taste
  • Juice of 2 limes
  • 10 fresh mint leaves
  • Soda water
  • Ice
  • Fresh mint leaves and strawberry slices or grapefruit wedges for garnish

Instructions

  • Muddle strawberries in a cocktail shaker, or pour in grapefruit juice.
  • Add mint leaves and lime juice to the shaker, and muddle gently.
  • Add coconut milk, rum, and simple syrup to the shaker.
  • Fill the shaker with ice and shake well until chilled.
  • Strain the mixture into glasses filled with ice.
  • Top off each glass with soda water and stir gently.
  • Garnish with fresh mint leaves and a slice of strawberry or grapefruit.
