Add mint leaves and lime juice to the shaker, and muddle gently.
Add coconut milk, rum, and simple syrup to the shaker.
Fill the shaker with ice and shake well until chilled.
Strain the mixture into glasses filled with ice.
Top off each glass with soda water and stir gently.
Garnish with fresh mint leaves and a slice of strawberry or grapefruit.
