Preheat your pizzelle iron and lightly spray it with nonstick cooking spray.
In a large mixing bowl, combine flour, sugar, melted butter, eggs, anise or vanilla extract, and baking powder. Mix until smooth.
Scoop a rounded tablespoon of batter onto the center of the preheated pizzelle iron.
Close the iron and cook for 30 seconds to 1 minute, or until the pizzelle is golden brown.
Carefully remove the pizzelle with a nonstick spatula and place it on a cooling rack.
Repeat with the remaining batter, spraying the iron as needed.
Let the pizzelles cool completely.
Dust with powdered sugar if desired, and enjoy!
