Instructions
Heat olive oil in a large pot over medium heat.
Sauté chopped onions, carrots, and celery until they are softened, about 5 minutes.

Add diced ham, dried thyme, and bay leaf, stirring to combine.

Pour in chicken broth and bring the mixture to a boil.

Reduce heat and let the soup simmer for 30 minutes, allowing flavors to meld.
