  • 2 cups diced ham use leftover ham
  • 1 cup chopped carrots fresh or frozen
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 6 cups chicken broth low sodium preferred
  • 2 teaspoons dried thyme or to taste
  • 1 bay leaf bay leaf
  • 1 tablespoon olive oil for sautéing

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté chopped onions, carrots, and celery until they are softened, about 5 minutes.

  • Add diced ham, dried thyme, and bay leaf, stirring to combine.

  • Reduce heat and let the soup simmer for 30 minutes, allowing flavors to meld.

Notes

Best served with warm cornbread.
