Ingredients

  • 125 g unsalted butter
  • 100 g light brown sugar
  • 100 g white granulated sugar
  • 1 medium egg
  • 1 tsp vanilla extract
  • 25 g cocoa powder
  • 225 g plain flour
  • 1/2 tsp salt
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 100 g white chocolate chips
  • 100 g milk chocolate chips
  • 100 g dark chocolate chips

Instructions

  • Preheat the oven to 180C/160C Fan/375F and line 2-4 baking trays with parchment paper.
  • Cream together butter and both sugars until light and fluffy, using an electric mixer for ease.
  • Add vanilla and egg, mixing until well combined.

  • Stir in cocoa powder, flour, bicarbonate of soda, baking powder, and salt to form a thick dough.
    Folding in the Chocolate Chips
  • Fold in chocolate chips and spoon dough onto trays, leaving space between each cookie.

  • Bake for 10-12 minutes, adjusting for gooey or crunchy cookies.
