Ingredients

  • 1 Pound Italian sausage
  • 4 Slices bacon chopped
  • 1 Onion diced
  • 3 Cloves garlic minced
  • 4 Cups chicken broth
  • 2 Cups water
  • 3 Large potatoes diced
  • 1 Tsp red pepper flakes
  • 1 Tsp salt
  • 1/2 Tsp black pepper
  • 2 Cups chopped kale
  • 1 Cup heavy cream
  • Grated Parmesan cheese for serving

Instructions

  • In a large pot, brown the Italian sausage over medium heat, breaking it into small pieces as it cooks.
  • Add the chopped bacon to the pot and cook until crispy.
  • Stir in the diced onion and minced garlic, cooking until softened and fragrant.
  • Pour in the chicken broth and water, then add the diced potatoes, red pepper flakes, salt, and black pepper. Bring to a simmer and cook until potatoes are tender, about 15-20 minutes.
  • Stir in the chopped kale and heavy cream, simmering for an additional 5 minutes.
  • Serve hot, garnished with grated Parmesan cheese.

Notes

  1. You can use either spicy or mild Italian sausage depending on your preference for heat.
  2. Adjust the amount of kale and cream to your liking for a thicker or creamier soup.
