Ingredients

Soup

  • 1 tablespoon olive oil
  • 2½ cups ham, diced
  • ½ cup dry white wine
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 yellow onion, diced
  • ¾ cup carrots, diced
  • 2 celery ribs, diced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 32 oz pinto beans (two 16 oz cans), drained
  • 6 cups low-sodium chicken broth
  • ¼ cup heavy cream (optional)
  • 2 cups spinach

Seasonings

  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon mustard powder
  • ¼ teaspoon ground sage
  • ¼ teaspoon black pepper

For Serving

  • Freshly grated Parmesan cheese (optional)

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ham and cook until lightly browned and crisp. Remove from the pot and set aside.
  2. Turn off the heat, add the white wine, then return the heat to medium. Stir and scrape the bottom of the pot, allowing the wine to reduce by half, about 4 minutes.
  3. Add the butter and garlic, cooking for 1 minute. Stir in the onion, carrots, celery, Worcestershire sauce, hot sauce, and seasonings. Cook for 5–6 minutes, until the vegetables begin to soften.
  4. Add the drained pinto beans, chicken broth, and heavy cream, if using. Bring to a boil, then reduce to a simmer.
  5. Return the ham to the pot and simmer partially covered for 30 minutes, stirring occasionally.
  6. Stir in the spinach and cook for about 3 minutes, or until wilted.
  7. Taste and adjust the seasonings if needed. Serve hot with grated Parmesan cheese, if desired.
