- 1 large Yam peeled and cubed
- 2 cups Vegetable Broth
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 medium Carrot sliced
- 1 medium Scotch Bonnet Pepper whole (adjust for spice level)
- 2 tablespoons Fresh Thyme or 1 tablespoon dried
Instructions
- Heat the large pot over medium heat until warm.
- Sauté the chopped onion and minced garlic in the pot until translucent, about 5 minutes.1 medium Onion, 2 cloves Garlic
- Add the sliced carrot and cubed yam to the pot, stirring to combine.1 large Yam, 1 medium Carrot
- Pour in the vegetable broth and add the whole Scotch bonnet pepper and thyme.2 cups Vegetable Broth, 1 medium Scotch Bonnet Pepper, 2 tablespoons Fresh Thyme
- Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes, until yams are tender.
- Remove the Scotch bonnet pepper and adjust seasoning if necessary.
- Serve hot, garnishing with fresh thyme if desired.
