How to Prevent Cheesecake Cracking?

  1. Avoid Overmixing: Be careful while preparing cheese filling not to overbeat the eggs as it can incorporate too much air, leading to cracks when the air bubbles expand during baking.
  2. Gentle Cooling: After baking, let the cheesecake cool gradually in the turned-off oven with the door slightly ajar. This slow cooling process helps prevent sudden temperature changes that could cause cracking.
  3. Room Temperature Ingredients: Make sure all your ingredients, especially the cream cheese and eggs, are at room temperature before mixing. This ensures a smooth and even filling without lumps.
  4. Try a Water Bath: Consider using a water bath, also known as a bain-marie. Place the cheesecake pan inside a larger pan filled with hot water, which surrounds the cheesecake with gentle heat. This water bath method helps maintain moisture and temperature, reducing the risk of cracks and perfect baking.
  5. Use a Thermometer: Monitor the internal temperature of your cheesecake with a thermometer. Stop baking when it reaches around 145°F. As the temperature rises, so does the likelihood of cracks, so this step can help prevent them.

I tried your Philadelphia Cheesecake recipe, but unfortunately, it didn't turn out as expected. The texture was a bit denser than I anticipated, and the flavor seemed slightly bland. Maybe I missed a step, but I'll give it another shot with closer attention to detail.
