- 1 Stand Mixer
- 1 Cake Pan 9″
- Bowls, measuring cups and spoons
- Apple peeler
Ingredients
- 1 ½ Cups All Purpose Flour
- 1 ½ teaspoons Baking Powder
- 1 ½ teaspoons Salt
- 1 teaspoon Cinnamon
- 1 Tablespoon Dark Rum add an extra tablespoon if you want a strong rum flavor
- ¾ Cup Butter room temperature
- ⅔ Cup Granulated Sugar
- 3 Large Eggs Room temperature
- 2 Medium Apples cored peeled and chopped in ½” cubes
- 1 Tablespoon Lemon Juice
- 2 Tablespoon Granluated Sugar for sprinkling top of cake prior to baking
- 1 Medium Red Apple sliced thinly – do not peel optional for layering on top of cake
Instructions
- Preheat oven to 350°F and prepare a 9″ round cake pan with parchment paper or grease it.
- Core, peel, and chop apples into ½” cubes, tossing them in lemon juice to prevent browning.
- Whisk together flour, baking powder, salt, and cinnamon in a small bowl.
- Cream butter and sugar in a stand mixer until light and fluffy, then add eggs one at a time, mixing well.
- Mix in rum, then gradually add the flour mixture until just combined. Fold in the chopped apples.
- Pour the batter into the prepared pan, smooth the top, and sprinkle with sugar.
- Bake for 40-50 minutes, let cool, and optionally dust with confectioners’ sugar.
