Greetings, fellow foodies! Today on Beyond The Bayou Blog, we âre showcasing a classic dish with a modern twist: Low Carb Green Bean Casserole. I love discovering and sharing recipes that are straightforward yet deliver that warm, homey feeling, and this one certainly fits the bill.

Low Carb Green Bean Casserole is a delicious, keto-friendly version of the classic holiday favorite. This dish combines the rich, comforting flavors you love while keeping it low in carbs and gluten-free.

Fresh cremini mushrooms, creamy keto condensed soup, and crunchy fried onions create a mouthwatering blend that pairs perfectly with tender green beans.

Whether you’re adhering to a keto diet or just looking for a healthier side dish, this casserole is a perfect addition to your festive table.

Enjoy the tradition without compromising your dietary goals with this simple and satisfying recipe.

Keto Green Bean Casserole

This dish features a creamy sauce made from heavy cream, cream cheese, and soy sauce, simmered with a bit of dried onion until it’s thick enough to coat a spoon.

Fresh green beans are then mixed in and cooked a bit longer. Finally, it’s all placed in an oven-proof dish, topped with cheddar cheese, and broiled until the cheese is golden brown and bubbly.

I tried using frozen green beans, but they turned out too mushy. Fresh mushrooms added too much liquid, whether chopped or sliced.

However, a little minced garlic or a sprinkle of garlic powder enhances the flavor nicely. You can also add a drop or two of Worcestershire sauce or even a bit of butter for extra richness.

Don’t forget to check your soy sauce to ensure it’s gluten-free if that’s important to you, as not all soy sauces are. If you’re watching your sodium intake, opt for a low-sodium soy sauce. Enjoy your keto green bean casserole!

What To Serve With Low Carb Green Bean Casserole?

What To Serve With Low Carb Green Bean Casserole

Variations We Can Definitely Try!

  • Cheese Lover’s Twist: Layer in some shredded cheese between the green beans and on top before baking. Cheddar, Parmesan, or a blend of your favorite cheeses will add extra richness and flavor.
  • Crispy Bacon Addition: Cook some bacon until it’s crispy, crumble it, and sprinkle it over the casserole before serving. The bacon adds a savory crunch and an extra layer of taste.
  • Fresh Herb Infusion: Boost the flavors with fresh herbs. A sprinkle of chopped parsley, thyme, or rosemary mixed into the sauce or on top can elevate the dish’s overall taste.
  • Almond Flour Topping: Replace or complement the cheddar cheese topping with a mixture of almond flour, butter, and a pinch of seasoning. This provides a low-carb, crunchy alternative.
  • Veggie Medley: Add variety and nutrients by mixing in additional low-carb vegetables such as bell peppers, broccoli, or cauliflower.
  • Spice It Up: For a kick of heat, add a dash of cayenne pepper or red pepper flakes to the sauce. This will give your casserole a spicy dimension.
